CARROT CAKE Recipe With PANASONIC ELECTRIC OVEN
This is my first baking post in my blog. Although as a full-time housewife, I have been cooking and churning out many dishes using the oven for grilling and roasting, I have to admit that baking isn't my forte.
Well, it was until recently that I have gotten the latest Panasonic Electric Oven NB-H3800SSK and with my daughter, Clarrisha who loves baking more than anything else, I was inspired to try out a simple yet delicious recipe of baking the nutritious Carrot Cake.
We were eager to check out the many functions of the versatile and user-friendly oven which comes with analog knobs to simplify operations. My daughter was extremely pleased to know that the Panasonic Electric Oven NB-H3800SSK comes with separate lower and upper heat settings, to enable her to have a more precise control over the top and bottom heat.
She was telling me that "Mum, I wished we had this kind of oven earlier so my Ogura cake and Chocolate cake won't be burned on the top or uncooked on the inside". Ever since we had this amazing oven which comes with the settings of a built-in but compact enough to be a table top that fits well in my kitchen, everything was in place and all our worries were gone!
Deliciously Moist & Crumbly On First Bite
Why bakes a Carrot cake? Carrot cake fits well into my diet plan as it's the perfect simple healthy cake which is moist and incredibly delicious loaded with healthy ingredients - carrots, walnuts, raisins and coconuts.
Freshly Baked Healthy Carrot Cake
My version is healthier, minus the cream cheese frosting, using a small amount of coconut oil, half cup of raisins for the moistness and flavour, and the crunchy walnuts add a bit of Omega-3 fats to this sweet treat. It’s loaded with protein and essential minerals and scented with coconut oil. With a cup of hot green tea, this cake will make you forget about cream cheese frosting. Enjoy!

SUPER SIMPLE HEALTHY CARROT CAKE
A delicious and healthy carrot cake made using Panasonic Electric Oven NB-H3800SSK
Preparation Time: 10 mins
Cook Time: 40 mins
Total Time: 50 mins
Cuts Into 8 to 10 pieces
- 2 Cups Carrots (Peeled & Grated)
- 1/2 Cup Raisins
- 1/2 Cup Walnuts (Chopped)
- 3 Eggs (Lightly Beaten)
- 2/3 Cup Coconut Oil
- 1/3 Caster Sugar
- 2 Cups Self Raising Flour
- Preheat oven to 170°Celsius.
- Oil and line a deep 20-cm square cake tin with parchment paper.
- In a mixing bowl, stir together the carrot, walnuts, raisins and sugar until well blended
- Add the beaten eggs and oil and mix well until combined.
- Add in sifted flour into the carrot mixture and gently stir until evenly mixed.
- Pour into a prepared 20 cm baking tin.
- Bake for 40 mins at 170°Celsius until risen, firm on top, or until an inserted skewer comes out clean.
- Let cake cool in the tin for 5 minutes.
- Remove from oven, let cool slightly, and remove from pan.

Extra Virgin Coconut Oil, Eggs, Grated Carrots & Self-Raising Flour
Walnuts, Grated Carrots, Sugar & Raisins

Pour In The Carrot, Walnuts, Raisins & Sugar In A Mixing Bowl
Stir Together The Ingredients Until Well Blended
2/3 Cup Of Extra Virgin Coconut Oil
Add In Beaten Eggs & Oil & Mix Well Until Combined
Sifted Self-Raising Flour
Add In Sifted Flour Into The Carrot Mixture & Gently Stir Till Evenly Mixed

Pour Into A Prepared Baking Tin
Cake Mixture In The 20-cm Square Cake Tin Lined With Parchment Paper
Spread The Mixture Evenly Before Baking
Bake For 40 mins In The Preheated Oven At 170°Celsius
Baked Until Risen, Firm On Top
Or Until An Inserted Skewer Comes Out Clean To Check If The Carrot Cake Is Done
Let Cake Cool In The Tin For 5 Minutes
Remove From Oven, Let Cool Slightly, & Remove From Pan
