Mooncake Tutorial With Chef Chan
Lucky me on that day, I was offered an exclusive One-To-One Mooncake-Making Session with Chef Chan Wooi Leong during the media review at Summer Palace Restaurant. Chef Chan shows us the step-by-step method of making Crystal Green Tea with Single Yolk.
Pretty Excited At Mooncake Tutorial Session
Chef Chan prepared the three main ingredients to make a snow skin green tea mooncake. I started off with getting the right portion in weight for the green tea snow skin paste at approximately 110 grams, followed by the green tea lotus paste at 60 grams only. Kneading and shaping the mooncake skin takes place, steady and easy under the watchful eye of the chef.
Next, make a hole in the lotus paste to fit a single egg yolk and roll and shape carefully with our palm into a ball shape. With the filling in place, Chef Chan guided me to wrap the snow skin firmly around the lotus filling.
Awesome Experience At Mooncake Making Session
Finally, sprinkle some flour into the mooncake mould and place the mooncake into the wooden mooncake mould. Lightly press the mooncake, then remove it from the mould by hitting it firmly on the table. Voila, here you are my personalised handmade mooncake by Auntie Lilly!
