RECIPE: Steamed Fish Thai-Style From Auntie Lilly's Kitchen 

Who Says Healthy Food Can't Taste Good? Yummier than ever is this delicious plate of Steamed Siakap Thai Style dish from Auntie Lilly's Kitchen. Auntie Lilly tries out a new recipe using lots of fresh herbs and spices to let the natural flavours in my food shine through, eliminating the need to cover up dishes with heavy sauces & too much salt.

Using Serai, ginger, garlic, chilli padi, lime, and coriander leaves and roots too ~ these are natural flavour enhancers, all readily available and are familiar ingredients, which can add that special oomph to your usual fare.

For The Fish:
1 Whole Barramundi (Around 1- 1.5kg)

For The Ultimate Sauce:
4 Tbsp Lime Juice
2 Tbsp Chopped Garlic
1 Tsp Chopped Chilli Padi
2 Tbsp Chopped Palm Sugar
6 Tbsp Premium Fish Sauce
5 Stalks Lemongrass (Smashed)
1-2 Cup Of Corianders (Leaves + Stalk) 
1 Cup Chicken Stock (I used chicken granules/cubes mixed with water )


Cooking Instruction

How To Steam The Fish
  • Preparing a perfectly cooked fish is easier than you think! 
  • First, ensure that your fish is cleaned and ready by removing the scales and gutting it. 
  • Next, create three diagonal incisions on both sides of the fish. 
  • Take the top halves of some fresh lemongrass, bruise them gently, and stuff them into the cavity of the fish. 
  • Finally, steam the fish over high boiling water for around 10-15 minutes (depending on the size of the fish) until it's tender and flavourful. 

How To Prepare The Sauce
  • Start by heating the chicken stock in a saucepan until it comes to a boil. 
  • Add in the sugar, reduce the heat, and continue to boil until the sugar has dissolved completely. 
  • Then, pour the mixture into a bowl and set it aside. 
  • Now it's time to add some flavour to the soup!
  •  Mince some fresh garlic, chillies, and coriander and mix them into the chicken stock along with some fish sauce and lime juice. 
  • Stir everything gently and give it a taste test to ensure the perfect balance of sourness and sweetness. Once your fish is steamed to perfection, transfer it onto a serving platter with raised edges to hold the soup. 
  • Add a bed of coriander leaves on the platter and place the fish on top. 
  • Finally, spoon the soup over the fish, making sure to add plenty of garlic and chillies on top for that extra kick. 

With these simple steps, you'll be able to savour a delicious, aromatic and healthy meal in no time. Don't forget to pair your dish with some steamed warm rice for the ultimate dining experience. Enjoy!
