Iconic grilled fish dish has a recipe dating back 1,700 years ago

Upon a trip to Chongqing, China, the founders wanted to replicate the dish in Southeast Asia, successfully launching its first outlet along Mosque Street in Singapore and later bringing the well-loved brand to Malaysian shores.
CEO of Chong Qing Grilled Fish, Khoo Siow Kiat shared, “It was this very dish that left a lasting impact on us and we knew that it was a concept that should be introduced outside of Chongqing, China. We too experimented with the classic grilled fish and Chong Qing Grilled Fish is the result of our own take on Sichuan cuisine.”
Chong Qing Grilled Fish is known for its Signature Grilled Fish which borrows its recipe from the classic Chongqing grilled fish, commonly prepared in a simmering hotpot. The chefs in this region of China seldom cooked according to recipes, preferring to experiment with new styles of cooking and as a result of this, the dish has many different variations and is highly versatile.
Available at Chong Qing Grilled Fish is their Signature Grilled Fish which is highly customisable and can be prepared in a choice of 8 different flavours and is further marinated with over 20 types of herbs and spices. The 8 different flavours to choose from are Spicy Fragrant, Spicy Numbing, Pickled Cabbage, Hot & Sour, Mushroom Herbs, Fermented Black Bean, Fresh Chillies and Chopped Chilli Pepper.
What makes the restaurant’s Signature Grilled Fish so special is the fact that it has a crispy skin exterior coupled with pillowy-soft flesh beneath and is served in a sea of broth. Journalists were educated on the simple 4-step process to order the Signature Grilled Fish and this includes selecting a type of fish, choosing a broth flavour, opting for a level of spiciness and adding a choice of sides.
Chong Qing Grilled Fish highly recommends its “Spicy Fragrant” (一品香辣) or “Spicy Numbing” (川味麻辣) broths which are bound to get all the senses awakened. It is ideal when paired with the chef’s recommendation of “Temerloh Patin”, for its rich, fatty yet tender texture. It also has a delicate sweetness to it which will never go wrong with any broth.

The Signature Grilled Fish is priced from RM58. Additionally, other key dishes at Chong Qing Grilled Fish includes the Offal Slices (RM22), Spicy Chicken Cubes (RM30), Double-Cooked Spicy Pork Slices (RM28) and Hand Shredded Cabbage (RM18).
