Spice Up Your Kitchen With Chefology & McCormick At The Cooking House With Chef Of The Day, Collin Edward Lim
Recently, I was privileged to be invited to attend a private blogger 'Meet & Greet' session jointly hosted by popular brands Chefology and McCormick at The Cooking House in Bangsar. This collaboration aims to introduce the newest additions to Oasis Swiss Sdn Bhd's Chefology range of cookware, the Chefology Nature Series, comprising a collection of five cookware items designed for the comfort of cooking in the kitchen.
As a full-time housewife and food blogger, I was pretty excited to be invited to share in the fun and joy of cooking at the 'Meet & Greet' Cooking Workshop with the rest of the Malaysian bloggers. Two simple, easy to prepare but delicious recipes have been created using McCormicks herbs and spices to showcase the quality and versatility of McCormicks products that are distributed in Malaysia by GBA Corporation Sdn Bhd.
I have been using McCormick's especially their herbs and spices products for many years ever since I started cooking. Well-known for its extensive range of flavours, McCormick has always been my top choice when choosing for quality and premium flavouring I needed to enhance the taste of my home cooked dishes. McCormick's Mixed Herbs is my Go-To seasoning herbs for almost every type of Western dishes in my kitchen.
At this workshop, I was introduced to 3 McCormick's product which is the McCormick Sea Salt Grinder, McCormick Black Peppercorn Grinder and McCormick Grill Mates BBQ Sauce. I also found out that the McCormick Sea Salt Grinder and McCormick Black Peppercorn Grinder are bottles that come with a built-in adjustable grinder for the ease of use in the kitchen.
They are equipped with three different grind settings of fine, medium and coarse. So with just a simple movement of the dial, one cook personalize the coarseness of salt and pepper from grinder to suit one's meal.
Harvested from the French Mediterranean Sea, McCormick Sea Salt tends to be coarser with a higher concentration of minerals. Paired with the freshly grounded black pepper from the McCormick Black Peppercorn Grinder that provides a warm and pungent flavour. a tasty journey is assured.
McCormick Grill Mates BBQ Sauce adds an authentic American barbecue flavour to any dish. A bottle of McCormick spice rub is incorporated into the BBQ sauce which makes it even thicker, more flavourful and excellent as a sauce, dipping, marinade and glaze. This is basically a 2-in-1 special concoction that makes it a very versatile sauce to use in any recipes.
The BBQ sauce is available in three mouth-watering flavours for you to choose from:
- Vintage Smokehouse - Delicious Smoky Hickory Layered With Premium Spices like Chilli Pepper and Paprika.
- Brown Sugar - Tantalizingly Sweet With Brown Sugar, Onion, Cinnamon and Cloves.
- Chilli And Pepper - A Delectable Blend Of Onion, Tomato, Chilli Pepper, Capsicum and Cloves.
Chefology Nature Cookware
At the workshop, we were given the opportunity to check out a high-quality premium cookware from Chefology. Designed with an ergonomic structure, Chefology Nature Cookware is made of die-cast aluminium, with a six-layer coating that ensures a safer cooking experience.
I'm not new to Chefology products and in fact, have been dreaming to own one of the latest marble ceramic cookware range. I may have quite a collection of pots and pans and even a big cast iron wok but a marble ceramic pan, that really is the icing on the cake.

At the 'Spice Up Your Kitchen: Blogger Meet & Greet Cooking Workshop with Chefology & McCormick', we have the pleasure of friendly Chef Collin Edward Lim of The Cooking House to prepare two delicious recipes and shared cooking tips with the bloggers using the latest Chefology Nature cookware with a touch of authentic flavours from McCormick herbs and spices.
Chef Collin demonstrated three easy to cook recipes - Braised Short Ribs, Cheesy Black Pepper Chicken Salad as well as Basil Crepes with Caramelised Banana. The food was cooked on Chefology Nature cookware with the flavourful McCormick's herbs and spices.
Everyone was both excited and anxious to participate in the 'Bloggers Cook-Off' session where we were given an hour to prepare two recipes. I have a fun cooking session partnering with two lovely ladies bloggers, Masterchefs Choi Yen and Kelly Chin to prepare Cheesy Black Pepper Chicken Salad & Basil Crepes With Caramelized Bananas! 😋😋😋
Cooking the healthy chicken salad was easy and fast using the both the McCormick Black Peppercorn and McCormick Sea Salt as the main ingredients to marinate the chicken. For the salad dressing, we used McCormick Black Peppercorn and McCormick Hot Chilli Powder to spice up the flavour.
Cheesy Black Pepper Chicken Salad
As for the yummy crepes dessert, we used the usual ingredients of flour, sugar, eggs, milk and butter but we had two secret ingredients from McCormick - McCormick Sea Salt and McCormick Basil Leaves to give the crepes a little oomph!
I was nervous as it was my first hand trying to cook crepes. Nevertheless, cooking the delicate crepes on the non-stick Chefology Nature Series Frying Pan has made my work a breeze. It was easy to flip the thin and delicate crepes as they do not stick to the pan at all even without any oil.
All-in-all, I have an enjoyable and creative cooking experience with Chefology Nature Cookware using the McCormick herbs and spices as part of the ingredients. I'm impressed with Chefology Nature Fry Pan for its solid non-stick quality and even heat distribution enabling me to cook perfect crepes in minutes without a single drop of oil.
So healthy cooking, right? Same goes for the chicken dish where I used only a teaspoon of oil to pan fry the chicken breast on both sides without the skin sticking to the pan.

Braised Short Ribs
Braised Short Ribs
Serves 4-5
Preparation time: 10 minutes
Cooking time: 4 hours
3 bone-in short ribs (about 1.8kg)
2 red onions, quartered
1 bulb garlic, halved
2 medium carrot, peeled and cut into 3 inches matchstick
200 g pumpkin, slice into wedges
1½ cup Grill Mates Vintage Smokehouse
3 cups water
10 g McCormick Thyme Leaves
1 tbsp McCormick Black Peppercorn Grinder
2 tbsp McCormick Sea Salt Grinder
¼ cup olive oil
Method
- Season the ribs with McCormick Sea Salt Grinder. In a Chefology Nature Series Pot, add oil and sear the ribs for 3-4 minutes on each side. Remove the ribs.
- In the same Chefology Nature Series Pot, lower the heat then add the onions, garlic, carrots, pumpkin and sauté for a few minutes or until the onions have browned.
- In a bowl, mix the Grill Mates Vintage Smokehouse with water.
- Add the ribs into the Chefology Nature Series Pot and add in the Grill Mates Vintage Smokehouse mix with the vegetable.
- Add in the McCormick Sea Salt Grinder, McCormick Black Peppercorn and McCormick Thyme Leaves, cover the Chefology Nature Series Pot.
- In a preheated oven of 180oC, place the Chefology Nature Series Pot in the middle of the oven. Check periodically and add water if required, turn the ribs midway cooking.
- Remove the cover in the last 20 minutes to reduce and thicken the stock.
- Serve with some mash potatoes and the braising sauce.
Chef tips: Instead of using the oven, it can be done in a slow cooker. Any root vegetable may be used in this recipe as well such as sweet potatoes, potatoes and parsnips

Mix The Grill Mates Vintage Smokehouse With Water & Add Into The Pot
Super Delicious Cheesy Black Pepper Chicken Salad
Serves 2-3
Preparation time: 25 minutes
Cooking time: 7 minutes
1 tbsp McCormick Black Peppercorn Grinder
1 tbsp McCormick Sea Salt Grinder
400 g chicken breast
1 tbsp oil
2 heads Romaine Lettuce, torn into bite-sized pieces
80 g Iceberg lettuce, torn into bite-sized pieces
30 g cherry tomatoes, halved
50 g yellow capsicum, sliced
50 g red capsicum, sliced
A handful of red chard salad leaves
A handful mix of cheddar and mozzarella cheese
1 tsp McCormick Black Peppercorn Grinder
½ tsp McCormick Hot Chilli Powder
6 tbsp plain yoghurt
Method
- Marinate the chicken breast with McCormick Black Peppercorn Grinder and set aside for 10 minutes.
- Heat up oil in a Chefology Nature Series Frying Pan and pan fry the chicken breast on both sides for a few minutes. Remove from heat. In the same Chefology Nature Series Frying Pan, sprinkle cheese over the chicken then bake in preheated oven on 180oC for 7-10 minutes. Set aside.
- In a bowl, add in all the vegetables.
- Combine the dressing ingredients and toss together with the vegetables.
- Slice the chicken and toss into salad.
Chef’s tip: The romaine lettuce and iceberg lettuce may be replaced with any combination of salad greens.

Moving on to the next recipe, we worked hand-in-hand to cook up the Basil Crepes With Caramelized Bananas.
Basil Crepes With Caramelized Bananas
Pan-Fry Crepes Makes Easy With Chefology
Basil Crepes with Caramelized Bananas
Serves 3
Preparation time: 15 minutes
Cooking time: 20 minutes
½ tsp McCormick Sea Salt Grinder
1 tsp McCormick Basil Leaves
200 g plain flour, sifted
80 g sugar
4 eggs, lightly beaten
400 ml milk
30 g butter, melted
Caramelized Bananas
20 g butter
150 g brown sugar
6 bananas, halved
40 g raisins
To serve
Whipped cream
Method
- To make the crepes, combine the dry ingredients together in a mixing bowl. Add the remaining ingredients and mix well. Set aside for 10 minutes.
- Heat up Chefology Nature Series Frying Pan and rub some oil onto it by using a piece of kitchen towel. Spoon a ladle of the mixture into the pan and cook on medium heat until the underside of the crepe is golden. Flip the crepe over and cook for a further minute. Remove the crepe and repeat with the remaining batter until used up. Set crepes aside.
- To make the caramelized bananas, heat up Chefology Nature Series Frying Pan to melt butter and sugar together. Toss in bananas and raisins. Set aside.
- To assemble, place 2 bananas and some raisins onto a piece of crepe. Fold into half and half again. Repeat with the remaining crepes and bananas.
- Serve warm with whipped cream.
Chef’s tip: You may replace bananas with fresh berries.
