MY FAMILY HERITAGE RECIPE 
 RECIPE - A-MEEN NOODLES

Hi Everyone! Bet every family has a recipe or two that they cherish—family recipes. Family recipes are certain foods that remind us of warm feelings and happy memories with the ones we love. These can be foods our family always makes for celebrations and events and, more often, foods we enjoy eating together all the time.

Family recipes tell a story. They’re often connected to people, places, and special memories. They have a who, a where, and a why. You’re making family history when you prepare and eat these foods with your family. Read on for full story and recipe too!

So today, I'm taking the time to write a blog post that's close to my heart, sharing family recipes with my readers with a special food post dedicated to one of my family's closest family friend, who everyone's calls her affectionately, Fei Yee or Fat Aunty.  

This special 'A-Mee' recipe has been passed down from Fei Yee and is “keepers” at my house.  I also hope to pass on this recipe to my children with a wish that they'll soon pick up the recipe to cook this dish for their family too in future.

Fei Yee once told me ~ 'A' means very good or top marks. so she gave the name of 'A-Meen' to this dish. Hence, this special noodle recipe of hers is named 'A-Mee' or 'A-Meen' in Cantonese which mean 'A-Noodles'. So this 'A-Meen' is one of her favourite dishes and recipe has been passed down to my mum-in-law, then to me now. Late Fei Yee is no longer here with us now, but her recipes live thru us now!

You'll need Yellow Noodles, Minced Meat, Bean Sprouts, Zucchini, Anchovies, Coriander, Hard Tofu, Scallion, Cilantro, Chillie Padi and Calamansi Lime. This A-Meen is best eaten with Sambal Belacan. 


Ingredients (Serves 3 Pax)
✔️ 1 Packet  450 grams Yellow Mee (Yellow Noodles)
✔️ 400 - 500 grams Minced Meat (Pork or Chicken)
✔️ 300 grams Bean Sprouts (Taugeh)
✔️ 1/2 Bowl Anchovies (Ikan Bilis)
✔️ Zucchini or Cucumber, Julienned
✔️ 2 Pieces Firm Tofu (Cubed & Pan-Fried)
✔️ 3 Hard-Boiled Eggs
✔️ 5 cloves Minced Garlic
✔️ Calamansi Lime 
✔️ Chopped Chillie Padi, Spring Onions or Cilantro (Garnishing)

1 Packet  450 grams Yellow Mee (Yellow Noodles)

 400 - 500 grams Minced Meat (Pork or Chicken)

300 grams Bean Sprouts (Taugeh)

1/2 Bowl Anchovies (Ikan Bilis)

Zucchini or Cucumber, Julienned

3 Hard-Boiled Eggs

Chopped Chillie Padi, Spring Onions or Cilantro (Garnishing)

Calamansi Lime



Spring Onions or Cilantro (Garnishing) 


Minced Meat Marinade
✔️ 2 tablespoons  Light Soy Sauce
✔️ 2 tablespoons Oyster Sauce
✔️ 1 tablespoon Sesame Oil
✔️ 4 dashes White Pepper
✔️ Salt to taste

Directions: 
To Prep

Yellow Noodles & Bean Sprouts
  • Blanched noodles & bean sprouts with hot water for 10-15 seconds. Drain & set aside.  

Minced Meat (Pork or Chicken)
  • Marinade for at least 30 minutes prior to cooking.

To Cook Broth
  • Wash & rinse the anchovies.
  • Put 1 tablespoon of oil & pan-fry them till fragrant
  • Pour in 3 cups of water, bring to boil 
  • Lower heat & simmer for 5 minutes
  • Strain out the anchovies & discard them
  • Seasoned with chicken powder/granules, sugar, salt & pepper
  • Add 1 tablespoon of Dark Soy Sauce 
  • Thicken broth with cornflour or tapioca flour concoction ( Tapioca/Cornflour Flour + Water to your preferred consistency)  

To Cook Minced Meat
  • Heat oil in a wok & saute garlic till aromatic
  • Add the minced meat. Fry till cooked & slightly brown
  • Pour in 1/2 cup of water & 1 tablespoon dark soya sauce 
  • Stir well, bring to boil. Simmer for 5 minutes
  • Seasoned well with more oyster sauce if required.  
To Serve
  • Place noodles on plates
  • Arrange eggs, bean sprouts, tofu, zucchini or cucumber around the noodles 
  • Top with minced meat. 
  • Ladle broth over noodles, garnish with chiilie padi, scallions or cilantro leaves.
  • Great served with Sambal Belacan & Calamansi lime juice

STEP-BY-STEP PHOTO GUIDE RECIPE
Heat oil in a wok & saute garlic till aromatic

For a more fragrant meat dish, use Sesame Oil

Add the minced meat. 

Fry till cooked & slightly brown

 
Pour in 1/2 cup of water & 1 tablespoon dark soya sauce 

Stir well, bring to boil. Simmer for 5 minutes

Minced Meat Toppings 
Seasoned well with more oyster sauce if required. 

Anchovies Broth ~ Seasoned with chicken powder/granules, sugar, salt & pepper

Add 1 tablespoon of Dark Soy Sauce 

Thicken broth with cornflour or tapioca flour (Your preferred consistency)

A-Meen Broth Ready To Serve Over Noodles

Place Noodles & Bean Sprouts On Plate 

 Best Served With Homemade Sambal Belacan For The Extra Kick & Spiciness 
 
Put In All Ingredient Together
Blanched  Noodles, Bean Sprouts, Shredded Zucchini, Scallions, Tofu & Eggs Onto A Plate

Well - Voila, The Final Product 
A Soul-Warming & Tummy Happy A-Meen
