Hi Everyone! Happy Cooking for Auntie Lilly again. Today I'm excited to share one of my family's favourite chicken rice dish ~ Claypot Chicken & Mushroom Rice With Brand's Essence Of Chicken. An easy to cook dish as this is an all-in-one Rice Cooker dish where you just add in the rice and the rest of the ingredients into the rice cooker at one-go!
Brand's Essence Of Chicken
This time I'm also trying out a new recipe using the Brand's Essence Of Chicken with an aromatic flavour adding in the unaminess to my rice dish. Auntie Lilly has chosen to use the BRAND'S Essence of Chicken; a natural extract of fine quality chicken which is proven to help to boost one's immunity in these trying times.
Other benefits of regular consumption of the Brand's Essence of Chicken has been found to reduce tiredness while improving our mood and concentration level which is critically needed now.

The ingredients for this all-in-one Rice Cooker dish includes Rice, Marinated Chicken, Chinese sausages, Salted fish, Shiitake Mushrooms, Ginger and Garlic - which are cooked together in the rice cooker.

Shiitake Mushrooms
Ingredients
✔️ 2 Pieces Chicken Thighs or Breastmeat, cut into pieces
✔️ 1 pair Chinese Sausage + Liver Sausages (Lap Cheong) sliced
✔️ 4-5 Pieces Shiitake Mushrooms
✔️ 2 inches Salted Fish, sliced
✔️ 4 inches Julienned Ginger
✔️ 5 cloves Minced Garlic
✔️ 1 bunch Spring Onions or Cilantro (Garnishing)
Marinated Chicken
✔️ 2 tablespoons Shaoxing Cooking Wine
✔️ 2 tablespoons Light Soy Sauce
✔️ 1½ tablespoon Dark Soy Sauce
✔️ 2 tablespoons Oyster Sauce
✔️ 4 inches Julienned Ginger
✔️ 5 cloves Minced Garlic
✔️ 1 teaspoon Sesame Oil
✔️ 4 dashes White Pepper
✔️ Salt to taste
Brown Rice
Rice✔️ 2 cups Brown Rice
✔️ 1 Bottle of Brand's Essence Of Chicken
✔️ Shiitake Mushroom Soaking Water
✔️ 2 tablespoons Light Soy Sauce
✔️ 1 tablespoon Dark Soy Sauce
✔️ 1 teaspoon Chicken Powder/Granules
Directions:
Salted Fish
- Thinly slice the salted fish and pan-fried with some oil till crispy. Put aside.
Chicken
- Deboned & cut chicken. Marinade for at least an hour prior to cooking.
1 Bottle of Brand's Essence Of Chicken
Shiitake Mushroom Soaking Water
Rice
- Wash & rinse the rice well.
- Add Rice, Brand's Essence of Chicken, Mushroom Water, Light Soy Sauce, Dark Soy Sauce & Chicken Powder/Granules.
- Mix well & remember to TOP-UP the water level as per the rice cooker instructions for cooking of 2 cups of rice.
- Press cook to start cooking the rice.
- Add Marinated Chicken, Chinese sausages & Shiitake Mushrooms into half-cooked rice.
- Allow cooking until the rice cooker button pops to stay warm.
- Optional - Press cook again if you want it to form a nice crunchy rice crust at the bottom of the rice.
- Let the rice cooker be on stay warm for 15 minutes before serving.
- Mix well & Garnish with fried salted fish and chopped spring onions.
