Scrumptious Creamy Butter Chicken
"What's for dinner tonight?" - I often get asked this question on every single day by my kids being a full-time housewife for so many years. Oh my goodness, Auntie Lilly - Day cook ... Night cook! I'm sure all mommies only cook their family favourite dishes, right?
Auntie Lilly got a special request from my foodies' son one day to cook this special favourite chicken dish for him - Malaysian Style Creamy Butter Chicken. This is a creamy, rich in taste and an aromatic dish that's prepared with lots of fresh ingredients including Curry Leaves and Garlic!
BABA's Curry Powder, Curry leaves, Garlic, Chillies Padi, Milk & Cooking Butter
Absolutely a very easy dish to prepare but taste amazing with only a handful ingredients including Chicken, BABA's Curry Powder, Turmeric Powder, Curry Leaves, Garlic, Chillies Padi, Milk and Cooking Butter.
Nothing beats this bite-sized crispy pan-fried chicken dish in a rich, spicy sauce to go along with a piping hot bowl of Turmeric rice. This one is a keeper!
3-4 Stalks Curry Leaves
Baba's Curry Powder
200ml Evaporated Milk
2 Tbsp Butter
3 Bird’s Eye Chillies
✔️ 2 Chicken Thighs Or Breastmeat (Boneless & Cut Into Bite-Sized Pieces)
✔️ 2 Tbsp Butter
✔️ 3 Bird’s Eye Chillies
✔️ 2 Tbsp Minced Garlic
✔️ 3-4 Stalks Curry Leaves
✔️ 3 Tbsp Baba's Curry Powder
✔️ ½ Tbsp Turmeric Powder
✔️ 200ml Evaporated Milk
✔️ Pinch of Chicken Stock Powder
✔️ Salt and pepper (to taste)
✔️ 2 Tbsp Curry Powder (Preferable Baba's Curry Powder)
✔️ ½ Tbsp Turmeric Powder
✔️ Pinch Of Chicken Stock Powder
✔️ ½ Tsp Pepper
✔️ ½ Tsp Salt
- Combine chicken and marinate well in a bowl. Marinade for a minimum of 2-3 hours in the fridge.
- Pan-fry the chicken until deep golden brown. Dish up chicken, drain and set aside.
- Heat wok and add butter. Fry chillies, garlic, curry leaves & Baba's Curry Powder (1 Tbsp) till fragrant.
- Pour in Evaporated Milk. Stir well, bring to a boil. Add in chicken stock powder, ½ cup water, salt and sugar to taste.
- Add chicken and let it cook thoroughly. Stir to coat chicken pieces evenly in the sauce. If the dish is too spicy, tone it down with a pinch of sugar.
- Serve hot with Turmeric rice.

Freshly Pan-Fried Deep Golden Brown Chicken
Heat wok & add butter. Fry chillies, garlic & curry leaves
Add in 1 Tbsp of Baba's Curry Powder. Fry all till fragrant
Pour in Evaporated Milk. Stir well, bring to a boil
Add in chicken stock powder, ½ cup water, salt & sugar to taste
Add chicken & let it cook thoroughly
Stir to coat chicken pieces evenly in the sauce
