The fish is brought here in its freshest form as it is harvested on the same day it is served. Our culinary team has both the appreciation and fascination for the Giant Grouper, not just for its size but more on the "nose-to-tail" dining philosophy that every part can be used to create a different, yet exquisite dish. Very minimal portions are gone to waste, one just has to understand and respect each part of the fish, and present a cooking method that brings out the best flavour and texture" says Executive Chef, Eric Siew.
Magnificent Giant Estuary Grouper
Executive Chef Eric Siew went on to explained that this variety of grouper well-known for its monstrous size is bred for two years to reach their massive sizes, weighing at 23kg to 25kg each! These fresh farm grouper are sourced from a sea farm in Penang and are transported on a weekly basis to ensure freshness.
The Giant Estuary Grouper, also known as the Goliath Of The Sea, are specially bred with small fishes as food and not pellets which will be transformed into six distinctive Malaysian favourites for diners to enjoy.
Being a big fan of fish, I was pretty excited to taste all six amazing dishes where Makan Kitchen prides itself on showcasing the versatility of the Giant Estuary Grouper. Chef prepared the fish with several types of cooking style from steaming, stewing to frying and brewing into a nutritious soup too.

STAR OF THE NIGHT
FISHBONE SOUP WITH GIANT ESTUARY GROUPER CARPACCIO
An outstanding dish which stands out among the rest of the dishes, the Fish Bone Soup with Giant Estuary Grouper Carpaccio one of the best-tasting fish broth I had ever tasted. Using fish bones harvested from the gigantic grouper, Chef prepared the soup base by boiling roasted fish bones with some fresh fish bones together with chicken bones, peppercorns and ginger for 4 hours of consistent temperature to bring out the flavour.
Rich In Taste Fish Bone Soup
The end result is a deliciously smooth, full-bodied and velvety soup texture, absolutely good to the last drop. At the live-cooking station, the chef will only prepare the soup upon order, with raw slices of grouper carpaccio placed into a freshly boiled and steaming hot fish soup where the hot soup itself will cook the fish. Preserved vegetables (ham choy) and tomatoes are added in to enhance the taste and flavour. Thumbs up for this excellent dish, great comforting soup for any time of the day! 😍😍😍

Tender & Succulent Fish Meat
Coming up SECOND on my tasting list is none other than this super healthy and nutritious freshly steamed fish dish. You'll fall in love with the interesting good taste of the fresh meat, firm and bouncy. The chef uses the lower body of the grouper (near the belly) for it is the oilier part of the fish, just perfect for steaming. I also remember him telling me that for this part of the fish is a crime not to steam it! 😍😍😍
Delectable Steamed Fish Dish
Thinly sliced grouper steamed to perfection in one of the simplest cooking styles is served with chef's blended soy sauce to bring out the natural sweetness of the grouper's taste. Served topped with shredded carrots, ginger and fried garlic for the extra kick in fragrant and texture.
GIANT ESTUARY GROUPER CONGEE WITH DRIED OYSTER
Smooth & Flavourful Fish Congee
Moving up the Top Three in my list, the Giant Estuary Grouper Congee with Dried Oyster didn't fail to impress me. Comfort food quality with the thick and smooth rice porridge, the fish stock are used to cook the porridge and with some dried oyster added in to bring out the umami flavour.
Simple yet tasty, the congee is prepared upon order with fresh fish added just before being served in claypot to contain the heat. Some may find the congee too bland, so you can add some light soy sauce or sprinkle in some fine salt to taste. 😊😊😊
STIR FRIED GIANT ESTUARY GROUPER WITH GINGER & SCALLIONS
Stir-fried Giant Estuary Grouper with ginger and scallions to bring new heights to frying fish as you crunch into the crispy and juicy flesh of the grouper and its delicious thick gelatinous skin.
