It's been awhile since I last dined at ISHIN. I had a satisfying dining experience enjoying some of the freshest and finest quality ingredients with an Omakase tasting session of dishes served based on Head Chef Willaim So's recommendation.

During my recent visit, I was treated to some of the chef's specialities serving the spring seasonal menu as its spring in Japan now. We started off with something a little different to warm up our insides, like a scrumptious chawanmushi. My appetiser was 3 Taste Mini Chawan Mushi.

Featuring a delightfully cute and petite serving of Uni, Tobiko and Caviar in egg shell Chawan Mushi, this dish gives diners not one but a multiple of 3 flavours to taste their smooth and warm steamed savoury egg custard with 3 different kinds of fillings. Chef's presentation for the authentic chawanmushi experience in serving these tasty mini treats in a small egg shell instead of the usual small Japanese tea cup or bowl.

The next tummy-warming appetisers come in the form of soup. Dobin Mushi Teapot Clear Soup is a wonderfully fragrant soup served in a dainty little teapot. Dobin ("teapot") Mushi ("steamed") is a soup steamed in a small teapot.

Put these two words together, and you have a nourishing dashi stock soup. Each teapot holds an individual serving of soup. The dashi-based broth is delicate, and the soup contains thin slices of mushroom, tofu and fresh seafood like prawns.

To serve, each individual teapot is presented with half of a lime on top. The soup is poured into the small cup and the ingredients are removed from the pot with chopsticks and placed in the cup. The citrus fruit is squeezed a little bit at a time in the sake cup. The ingredients and the broth are eaten alternately.

No Japanese cuisine would be complete without savouring the freshly air-flown in season "Chef Special Sashimi Set". Our sashimi course arrived in style - creatively presented in a mini replica of a boat with an amazing LED light. It's fresh and tasty with an assorted chef selections of premium sashimi... it's visually pleasing to the eye and of course, it's straight-up delicious!  😍😍😍

My 4th course is another great shot of seafood-licious Hokkaido Uni King Crab TeppanyakiHokkaido Uni is probably the most expensive and one of the top 3 seafood delicacies in Japan. This is definitely a must-try for crab lovers, tasting Hokkaido seafood which is the Shangri-la for seafood lovers.

Hokkaido Uni King Crab Teppanyaki is my top pick for the night. The dish is a popular choice because it's just simply tasty and delectable, seasonally available and it makes a good appetiser or side order too when having sake or beer.

My next course was Surume Ika Teriyaki. Tasting this big squid also reminds me of my first encounter at YUZEN Japanese Restaurant as it was definitely a very memorable food-tasting experience. Read More Of YUZEN Review HERE

ISHIN's version of Surume Ika Teriyaki features a large whole squid with tender and chewy textures, contrasted perfectly well with sweet and savoury salty teriyaki glaze.

Those who must have some cheese in their meal can pick Giant Oyster Cheese Yaki. Fresh Giant Oyster as big as my palm has a creamy white meat with a firm texture and briny flavour goes well in-hand-in with the cheese topping.

The Soft Shell Crab Tempura is a crowd-pleaser -- think of crispy and crunchy bits of tempura melting in your mouth. Rated satisfactory, the tempura has a thin crispy golden skin filled with the soft shell crab within.

Last but not least, we decided to try some Gyoza which is simply Japanese Pan Fried Chicken Dumplings to end our dinner before checking out the famous Raindrop Cake completing our meal on a sweet note.
