My hubby and I were looking forward to the tasting of this amazing unique dish - Beggar Chicken at New Village OUG Chinese Restaurant. You see, not many restaurants in Klang Valley does offer this dish as it's tedious to prepare and take long hours of preparation with many ingredients to prepare. This dish is considered a staple of Chinese haute cuisine, hence, we both jumped at the offer to taste and review this new restaurant.

New Village OUG Restaurant has a simple setting keeping in line with the ambience of a village theme with the style of a heritage village decor. Upon entering, you'll notice a  display of the 'Earth Oven' a replica design of the original stove, used for the baking their signature dish, Beggar Chicken. I was told that the conventional method of cooking a beggar chicken where the chicken will be buried in the gravel and it'll take up to six hours or more to cook.

The chef behind this amazing dish, is Chef Kam Chun Kit, a talented chef who created his own recipe which is exclusive to New Village Restaurant. Chef Kam uses more than 10 types of herbs and ingredients to prepare authentic Chef Kam's Beggar Chicken.

Only juicy and tender free-range chicken or commonly known as ayam kampung or 'Choi Yeen Kai' is used for the dish. The tedious preparation starts off with the cooking of the stuffing of the ingredients and filling it into the cavity of the tender chicken. The whole chicken is then sealed and marinated and carefully wrapped in a combination of cellophane wrap and aluminium foil.

A thin layer of non-toxic clay coats the entire package prior to baking for three to four hours in the charcoal oven. So, the chicken is stuffed, wrapped in clay, and roasted, taking a total of 8 hours to prepare a single serving.

The dish that fits for an Emperor makes its grand appearance at the dinner table and is then ceremoniously cracked open in front of guests. Diners may have the honour of knocking off the hardened baked clay with a hammer.

Because the chicken is cooked in a sealed envelope, the original taste is perfectly kept, sealing in the rich, flavoursome juices with the flavour of wine penetrating into the chicken, you can smell the aromatic fragrance coming when opening the wrappings.

With its odd, rock-like appearance, Beggar’s Chicken may not look like a show-stopper when it first arrives at the table prior to opening, but diners eagerly await one thing - chicken with meat so tender that it slips off the bones. Everyone at the dining table enjoyed this exquisite smoky taste of the sauce. Needless to say, this amazing dish was good to the last bite!

Wooing diners for more delectable Chinese fare, Chef Kam surprised us with his second dish of Cantonese Fried Egg Noodle with King Prawn. This is a milder version of the usual 'Sang Har Mee" we used to eat. He poached the freshwater prawns to remove the strong prawn flavour prior to cooking.

Egg noodles were used and it's soaked in water to remove the odour (Kang Sui) before being lightly pan-fried for a crispy and springy texture. Fresh chicken stock to add on to the gravy to enhance the flavour, resulting in a delicious King Prawn noodles.
