Especially when roasted with Minced Garlic, 5-Spice Powder, Oyster Sauce, Pepper, Brown Sugar and a hint of Shaoxing Chinese Wine for an unbeatable flavour. This Oriental Crispy Roast Spring Chicken definitely beats the pants off of any rotisserie chicken!

Ingredients For Chicken Marinade (Serves 3-4 Pax)
✔️ 2 Tablespoons Minced Garlic
✔️ 1 Tablespoon 5-Spice Powder
✔️ 3 Tablespoons Shaoxing Chinese Wine
✔️ 3 Tablespoons Oyster Sauce
✔️ 1 Tablespoon Brown Sugar
✔️ 1 Teaspoon White Pepper
Direction: How To Roast A Whole Spring Chicken
The best roast chicken has garlic sauce under and on the skin, roasted until it’s crispy and deep golden on the outside, and juicy on the inside. Trust me, it's really easy to prepare a whole chicken for roasting.
The trick is to use an upside-down dessert spoon to loosen the skin – the shape hugs the curves of the chicken and it doesn’t tear the skin. Then simply spoon the garlic-spice-concoction under the skin then spread it from the outside.
Combine Minced Garlic, 5-Spice Powder, Oyster Sauce, Pepper, Brown Sugar & Shaoxing Chinese Wine
Rub Or Massage Well Over The chicken, Under The Skin & Inside The Cavity
Pour Remaining Marinade Into The Cavity Of The Chicken
Leave To Marinate In The Fridge For A Minimum Of 4 Hours
Grill In Oven or Airfryer
15 mins At 200°C
Turn to the other side to grill for another 20 mins at 175°C
Broil Until Golden To A Perfect Crisp

- Preheat oven.
- Preparation starts with a pre-marination of this plump fat 1.2kg Spring Chicken
- Rinse & pat dry chicken with a paper towel
- Combine Minced Garlic, 5-Spice Powder, Oyster Sauce, Pepper, Brown Sugar and Shaoxing Chinese Wine together, rubbing all over the chicken, under the skin & inside the cavity
- Pour the remaining marinade into the cavity of the chicken
- Leave to marinate well in the fridge for at least 3-6 hours for the flavour to sit-in
- Grill in the Oven or Airfryer for 15 mins at 200°C
- Turn to the other side to grill for another 20 mins at 175°C
- Broil until golden to a perfect crisp on the outside with a moist & juicy inside
