With the tagline of 'Preserving Tradition With Modern Innovation', I have decided to try out the classic and authentic recipe of 'Rendang Tok Perak' from the recipe book, 'One-Pot Wonders' by Chef Marina Mustafa & Sara Khong. You can purchase this book online from www.mphonline.com for RM 39.90. 

Well, in conjunction with the coming Ramadan festive celebration, I'm taking the opportunity to whip out some good old Malay traditional favourites for my food loving family with this amazing magic cooker from Philips!

To be frank, the last time I tried cooking this dish was a total failure although as much as I loved eating this yummy Rendang Tok, the thoughts of cooking this dish give me the shivers. You see, the Rendang Tok is the best Malaysian rendang, it's rich, loaded with spices and awesome flavours of fresh herbs but it takes forever to cook with constant stirring to make sure the dish does not burn at the bottom while trying to get the perfect dry consistency. I remember vaguely slaving myself over the cast iron wok while sitting on a high chair stirring the rendang dish for long hours and regretting ever cooking this dish.    

Coming back to my amazing PHILIPS All-In-One Pressure Cooker, I'm truly proud and happy to share the recipe with Step-By-Step cooking instructions with nice photos to conceptualise the whole cooking process in my blog here! ๐Ÿ˜๐Ÿ˜๐Ÿ˜ 

RENDANG TOK PERAK

RENDANG TOK PERAK 

Preparation Time: 20 mins
Cooking Time: 8 hours With Slow Cooking & 30 mins Pressure Cooked
Conventional Cooking Time: 3 - 5 hours
Makes: 4 Servings

INGREDIENTS TO MARINADE
  • 2 tsp ground cinnamon
  • 1 tsp ground black peppercorns
  • 1 tsp ground coriander
  • 1/2 tsp ground fennel
  • 1/2 tsp ground cumin 

INGREDIENTS TO BLEND (Spice Paste)
  • 2 red large onions
  • 3 garlic
  • 1-inch ginger, remove skin
  • 3 fresh turmeric root, remove skin
  • 2 inches galangal
  • 4 lemongrass

OTHER INGREDIENTS
  • 1 kg beef, cut into 1.5-inch cubes
  • 1/4 cup of oil
  • 2-star anise
  • 5 cloves
  • 5 cardamons
  • 1 tbsp chilli paste
  • 2 tsp tamarind paste diluted with 1/2 a cup of water
  • 2 tsp salt
  • 3 tbsp palm sugar, grated
  • 2 cups of coconut milk
  • 2 tbsp Kerisik
  • 3 pieces of Kaffir lime leaves
  • 1 turmeric leaf, sliced finely

COOKING INSTRUCTIONS

1 kg Beef Cubes & Grounded Spices
1. Place the beef cube in a plate and sprinkle the marinade ingredients over.

Massage the ingredients over the beef & set aside to rest for 20 minutes

2. Open the lid of The PHILIPS All-In-One Pressure Cooker & press 'SAUTE/SEAR HIGH TEMP' button & press 'START'

3. Pour in the oil & when hot, saute the blended ingredients, chili paste, star anise, cardamon & cloves until fragrant.

4. Put in the beef cubes into the PHILIPS All-In-One Pressure Cooker inner pot. Stir for 20 seconds.

Pour In The Marinated Beef & Stir

5. Pour in the coconut milk, tamarind juice, Kaffir lime leaves & palm sugar. Stir till combined.

 6. Close the lid & turn the value on top of the lid, towards the 'SEAL' position.

press 'PRESSURE COOK' & choose 'MEAT/POULTRY' & add on cooking time to 30 minutes. Then, press 'START'

7. Cook on 'SLOW COOK LOW TEMP' & set the cooking time to 8 hours. Then press 'START' 
OR press 'PRESSURE COOK' & choose 'MEAT/POULTRY' & add on cooking time to 30 minutes. Then, press 'START'

8. When 'KEEP WARM' light flicks on the panel, the Beef Rendang is ready. Release the pressure by turning the value towards the right most 'VENT'

9. Open the lid & put in the Kerisik & salt. Stir.

10. Press 'SAUTE/SEAR HIGH TEMP' button & press 'START'

11. With the lid open, continue cooking & stirring occasionally the Beef Rendang until the gravy thickens. Increase the searing time if a dry consistency if desired.

12. Sprinkle with finely sliced turmeric leaves over the Beef  Rendang when serving.

Now, you need not travel far all the way to Perak to savour the true Rendang Tok Perak. You can cook it in your own kitchen at home with the All-One-Cooker with minimal effort, just like how I did it. As you can see, it's such a breeze and less effort to prepare the dish with either the slow cook or pressure cook mode.

Dishes that needs long hours of cooking - stews and soups are made easy and can be prepared in a jiffy. With the easy to use multi-function like saute, stew, slow cook, sear, pressure cook, bake, warm or even reheat, I'm pretty impressed with this new innovation from Philips!  

I can cook at ease now and need not spend long hours preparing family favourites dishes like Stew Duck with Ginger, Mushroom Chicken, Red Beans Soup, Barley Foo Chuk Sweet Soup, Lamb Shank and so much more. Besides, I'm looking forward to trying out more new recipes from the All-In-One Cooker Recipe Book from Philips and explore the unlimited possibilities of what it can do in my kitchen! ๐Ÿ‘๐Ÿ‘๐Ÿ‘

  3. That's a very easy way to cook! Have always thought that this type of pressure cooker can only cook things eg soup, porridge. How big is the capacity? My experience with Phillips air fryer-too small

  8. I was loving my instant pot, bragging to all about it. Making my dogs food was so easy! I put in the food and the water, pressed pressure cook and like magic it was just done when it beeped. Getting used to the pressurization wasn't hard at all. It wasn't really difficult to use.instant pot 8 quart
