With many years of culinary experience with high-profile restaurants in Mexico and having his own restaurant in Oaxaca, Chef Jorge is famed for his creative use of ancient ingredients, which has become his culinary trademark and tradition for him to create sophisticated dishes using the most humble ingredients in Mexico.
During the media preview, we were treated to gastronomical journey of Mexican dishes such as Chiles en Nogada, Tacos Al-Pastor, Pollo Pibil, Tortilla Soup, Chicken Tinga and many more.
I started off my exciting dining experience with some very unique and interesting salad and appetiser as follows:
Guacamole with Pomegranate
Jicama Salad
Baby Corn With Chilli Mayo
Coconut Slices With Lime & Chilli Sauce
Oysters With Ancho Chilli Vinaigrette
Seared Tuna With Coffee & Sesame Seeds
Shrimps With Orange Peel & Chilli Aioli
Fried Squid Skewer With Jalapeno Pesto
Tortilla Soup
I also sampled Chef Jorge's creations of chicken, fish and beef dishes in his mains selection. My favourite among the rest was the Chicken Tinga, best eaten with corn tortilla and some chopped lettuce. Fabulous Mexican flavour with tinga as it has a spicy, smokey-sweet which I enjoyed eating very much.

Red Snapper Veracruz Style
Pollo Pibil
Chile En Nogada
Chef Jorges recommends the Chile En Nogada, a dish Mexicans eat to celebrate their Independence Day. Featuring the colours of Mexican flag, it consists of poblano chilis filled with mince beef, aromatics, fruits and spices topped with a walnut-based cream sauce (white), pomegranate seeds and parsley (red and green); thus giving three colours of the Mexican flag: green for the chili, white for the nut sauce and red for the pomegranate seeds.
Meatballs In Chipotle Sauce
Pineapple Tamal
Pumpkin
Moving on to the desserts include Rice Pudding, Churros and Cocadas, a traditional coconut confectionery.

Completing my Mexican dining experience was the world renowned Mexican spirit - the Tequila, most recognized and respected luxury spirits in the world, courtesy of
the country's Tequila Regulatory Council.
Served as a buffet with live action stations, these enticing
selections are priced at MYR 138.00 nett per adult and MYR 69.00 nett per child.
