Special Nenda Ayam Goreng Inchi Kabin is a popular Nyonya dish cooked on a ship for the sailors.
The chicken is flavoured with fennel, cumin, coriander, turmeric, black pepper, chilli powder, kaffir lime leaves, coconut milk plus a few more aromatic herbs and then fried using a 32 inches diameter long big Kawah.

Ikan Goreng Kari Pulleh Rangup Berlada Hitam

For the fish lover, you must check out the Ikan Goreng Kari Pulleh Rangup Berlada Hitam station, a classic recipe by great grandmom of Chef Isham.

Black pepper is good for health and also could help to get rid of the bad spirit. To enhance the taste, you may like to dip with fish of choice with sambal kalasan, sauce kasturi or ketumbar chili sauce.
Kambing Panggang Cik Mek Molek is a famous Kelantan style barbeque roasted lamb. The roasted whole lamb is marinated with freshly blended pineapple juice, a touch of honey and perfumed with freshly ground Tanah Merah spices.
The dish is served together with cinnamon roasted pineapple and moistens with special spicy kuzi raisin sauce. Spicy Kuzi Jabit, a special sauce made of Jabit, spices, tamarind, cashew nuts and dried chillies.
Roasted Lamb is perfect to be eaten together with Middle Eastern ‘Mandy’ Basmati Rice and Arabic bread, Pita.
Gulai Kawah, a special must-have dish at every home during break ‘fast’. Traditionally, parents will wait for the children to be home and then prepare the ‘gulai’ together. The family will enjoy the home-cooked gulai during break fast before Isyak prayer.
Gulai Kawah Pedas Tetel, braised beef cooked in coconut milk, cloves, star anise cardamon, enhanced with kerisik (fried coconut), gula Melaka (palm sugar and asam gelugor (sliced sour plum). The meat will be slowly braised until the meat is tender and gravy becomes semi-thick.
Mi Kolok, a well-known hawker food and signature noodle dish in Sarawak. Classically served with crushed garlic and shallot, minced meat, spring onion and sliced ‘Char Siew’ chicken coated with shallot oil.
Their special Mi Kolok is prepared with secret red shallot oil by Chef Stewart. For a tasty Mi Kolok experience, the noodle must be eaten together with pickled chillies and a bowl of soup. It is usually taken for breakfast, lunch, dinner and even for supper!
Any Kuching Kia who went overseas or anywhere outside Kuching, will always miss the Mi Kolok more than home. Besides noodles, you can also opt for Kway Teow or Bee Hoon.

Sweet, sour, minty and spicy are the magical words that will instantly come into mind when we think of the famous Penang Assam Laksa by Chef Chew. The spicy sour based soup takes hours of boiling to disintegrates the fish meats which will then become part of the aromatic broth.
Assam Laksa is served with generous portion sliced cucumber, onions, chillies, pineapple julienne, lettuce, mint leaves, ginger bud and rice noodle.

Finish off the evening with Bubur Kacang Hijau Durian by Chef Azmi. Bubur Kacang, the king of all ‘bubur’ is a sweet green bean soup boiled with coconut milk complemented with jellies, sticky rice and sago pearls. To satisfy the durian craving, Chef Azmi brings to you this special dessert with a touch of durian, the Malaysia King of fruit.
All these local highlighted dishes are prepared specially by designated chefs from their respective states, where all ingredients are selected thoroughly to ensure the authenticity and originality of the local dish.
