With the Lunar New Year just around the corner, invigorate your spirit with a delightful reunion feasting with family, friends and business partners. Select from three specially-curated Lunar New Year menus, featuring auspicious dishes like Double Boiled Chicken Soup with Red Mushroom and Fish Maw, Marinated Chicken with Fragrant Chinese Tea, Steamed Giant Grouper with Golden Mushroom and Black Fungus, Double Boiled Honey Melon with Red Dated and White Fungus, just to name a few.

Located on level one of the hotel, the Chinese inspired designed restaurant was impressive and tastefully decorated with its elegant and luxurious furniture with stunning Oriental themed lightings. The restaurant exudes a warm and inviting ambience making an ideal place to experience delightful New Year delicacies.

During the preview, we sampled the nine-course lavish festive menu from the Fortune Set Menu featuring auspicious dishes like Deep Fried Fish Skin and Jelly Fish Yee Sang, Double Boiled Chicken Soup with Fish Maw and Cordyceps Flower, Steamed Giant Grouper with Golden Mushroom and Black Fungus, Roasted Duck served with Plum Sauce, Wok-Fried Fresh Grass Prawn with XO Sauce, Braised Sea Cucumber with Sun-Dried Oyster, Black Mushroom, Sea Moss and Garden Green, just to name a few.

Deep Fried Fish Skin & Jelly Fish Yee Sang

We began our meal, as is now customary during the Chinese New Year period, with a Lou Hei or prosperity toss. The Deep Fried Fish Skin and Jelly Fish Yee Sang are from the Fortune Set Menu.

Toss to good health with Chef's housemade strawberry sauce instead of the usual plum sauce with the healthier version of  Yee Sang made from Snow Pear, mango, pomelo and deep fried Salmon skin. The traditional festive dish is further infused with olive oil, to meet health-conscious diners' preference for healthier options.

Double Boiled Chicken Soup with Fish Maw & Cordyceps Flower

Health is definitely an important factor in Chef Leong's CNY fare to warm your soul and delight your senses. The Double Boiled Chicken Soup with Fish Maw and Cordyceps Flower that follows is a lovely nutritiously delicious warm soup that celebrates the sweetness of both the core ingredients.

A worthwhile item to look out for is their doubled boiled soups. All three festive set menus come with it and it loaded with the goodness of Chinese mushrooms such as Red Mushroom and Cordyceps Flower with premium fish maw and the superfood Black Garlic.

Steamed Giant Grouper with Golden Mushroom and Black Fungus

Next, a fish dish is a must-have in any CNY fare, as the spread feature inherently Chinese dishes to signify the auspicious celebration. Lucky sayings for eating fish - 年年有余 (Niánnián yǒu yú) which loosely translated to wishing you to have a surplus (or fish) of food and money every year.

So, the Steamed Giant Grouper with Golden Mushroom and Black Fungus is a boneless Garoupa, which made for real effortless eating with its soft and fresh flaky meat. Because the fish is a symbol of fortune, it cannot be left out, so remember to more!

Roasted Duck Served With Plum Sauce

If you like the duck, then this the Roasted Duck served with Plum Sauce might appeal to you. Chef's roasted duck signifies good fortune and to my good fortune, it's tasty and easy to chew. One piece is not enough as everyone at the table took extra helpings.

Wok-Fried Fresh Grass Prawn with XO Sauce

An auspicious CNY meal will not be complete without prawns, which symbolise happiness. Prawn lovers can look forward to feasting on the Wok-Fried Fresh Grass Prawn with XO Sauce.  For me, it's arguably the highlights of the menu, the large prawns are fresh and chewy with contrasting seasonings, enhanced with the flavourful XO sauce making for an unforgettably interesting experience.

Braised Sea Cucumber with Sun-Dried Oyster, Black Mushroom, Sea Moss & Garden Green

Continuing the auspicious theme is the Braised Sea Cucumber with Sun-Dried Oyster, Black Mushroom, Sea Moss and Garden Green - a subtle and timely dish. This classic festive dish cooked with 'Fatt Choy' or black sea moss, which sounds like 'getting rich' in Cantonese, hence its popularity around Chinese New Year.

Fried Rice with Yam & Wax Duck Meat Wrapped In Lotus Leaf

Next came Fried Rice with Yam and Wax Duck Meat Wrapped In Lotus Leaf garnished with chopped scallions. The fried rice is fragrant with a tinge of saltiness from the wax duck meat, although not too overpowering.

Combination of Chinese New Year Cake
- Deep Fried with Yam
- Coated with Peanuts

No Chinese New Year gathering is complete without a taste of sticky nian gao, (glutinous rice cake) and the sticky dessert at Wan Chun Ting is reinvented as the Steamed New Year's Cake With Peanuts.

Next, is the all-time favourite traditional style of New Year's Cake Deep Fried With Yam. Coated and deep fried with yam, the nian gao turns into a very gooey delicious filling with its crisp and thin batter that makes it irresistible. Best when eaten hot from the wok.

More dessert follows which is the Double Boiled Peach Resin with Longan and Red Dates.  For this last dish, I just realised that there are no photos at all in my file. Got to blame it on the 'nian gao' dessert especially the peanut's one which is very delectable, thus Auntie Lilly lost her focus and forgot to take any shots that time!

Wan Chun Ting celebrates the festive tradition from 7th January to 19th February 2019, available for lunch and dinner. Private dining rooms are also available – perfect for a gathering of family and friends.
