For the first time ever, KL's Premier Pork Restaurant, ANTE is cooking up something special for August – a month that has a unique place in the hearts of all Malaysians. They are proud to announce the launching of their Merdeka Special Pork Rendang and Kerabu styled Blue Pea Flower Rice.

Thanks to the wonderful invitation from ANTE Kitchen & Bar, we were one of first lucky few getting to taste this famous traditional dish ~ Kerabu Rice or more commonly known as Nasi Kerabu! Read on for more and I'm pretty sure you all will be salivating over it after this!

ANTE's Pork Rendang Nasi Kerabu

To embrace our local Malaysian roots, this year, ANTE brings you their very own recipe of Nasi Kerabu with their special Pork Rendang tapping on the local tastebuds. They had specially created this dish in conjunction with the coming Merdeka celebration for the month of August 2018.
Pork-licious Rendang
ANTE's Pork Rendang is cooked through using traditional methods and then paired with other freshly made ingredients such as house-pickled acar, wok slow-cooked sambal, salted egg, toasted kerisik, traditional keropok ikan, four-angled bean, long bean, bean sprouts and finally topping with some bunga kantan to enhance the flavour.
The Pork Rendang was slow cooked for 5 hours whereby the chefs select only the best-imported pork shoulder cuts to be used in their own take of a traditional rendang. The ingredients are then arranged around ANTE's Blue Pea Flower infused rice and garnished with Bunga Kantan, ultimately forming the dish that is beloved by many – Nasi Kerabu.
Blue Pea Flower infused fragrant rice features handpicked butterfly pea flowers from one of our staffs’ grandparents’ garden. The flowers are then dried before being used as a natural colouring for the rice, cooked with a little bit of fresh coconut cream to ensure it is extra fragrant.

The Pork Rendang was slow cooked for 5 hours whereby the chefs select only the best-imported pork shoulder cuts to be used in their own take of a traditional rendang. The ingredients are then arranged around ANTE's Blue Pea Flower infused rice and garnished with Bunga Kantan, ultimately forming the dish that is beloved by many – Nasi Kerabu.

The house-pickled acar is made from hand-picked cucumbers, carrots, red chillies and pineapples are washed, sliced and then pickled with a mixture of Japanese white vinegar, rice wine vinegar and sugar overnight.
Their wok-slow cooked anchovies sambal sauce is made from scratch using dried chillies, anchovies, shallots, galangal and onions. Slow stirred over a traditional wok to ensure the flavours are done right.

This rendition of ANTE's Pork Rendang Nasi Kerabu will be available for the special month of August as a lunch feature (11am to 3pm) from August 1st to 31st daily, including weekends at both ANTE Solaris Dutamas and ANTE One Utama outlets.
