First on the table was the Two Varieties Sea Garoupa Fish dish, that makes a grand presentation when served on the dining table. The first dish consists of tender and succulent fillet that are marinated before being deep fried and topped with fried potato shreds and salad dressing.

Next, the rest of Garoupa meat are finely sliced with its delicious thick gelatinous skin, to be deep fried and served with a drizzling of wasabi & mayo sauce to enhance the flavour. The freshness of the Garoupa was evident in each bite!

The impressive, well-plated and crafted dish is a "Pre-Order" cuisine that needs at least a day for preparation and sourcing of ingredients. Chef added that each fish weighs at 1.5kg and above to achieve its maximum serving for at least 12 diners.

Potatoes lovers will enjoy the crispy deep-fried finely potato shreds toppings on the fish dish. In my photo, it might look like shredded ginger but it's not. Both the tender fish meat and the shredded potatoes paired up wonderfully together in this awesome dish!

Next on the table was the Fried Prawns With Potato Shreds & Salad Sauce. The freshwater prawns tasted amazing; juicy and bouncy despite only being seasoned with salt and pepper before it was cooked. It's being tossed in salad sauce and served topped with the crispy potato shreds.

Beneath the prawn's dish, Chef prepared a mango infused jelly or agar-agar as the base on the plate. If you like, you can scoop it with your spoon and digs in as you please. Everything is edible, said the chef!

 Drunken Prawns In Claypot
The Drunken Prawns In Claypot, the latest additionshould not be missed. House speciality in cooking these succulent Giant Freshwater Prawns, the chef  uses a combination of 3 types of wines namely the yellow wine (HaungJiu), Shao Hsing wine and rice wine to drizzle over the freshly cooked giant prawns prior to serving for the extra fragrant and flavour.

Drunken Prawns In Claypot
Star Of The Night

The Drunken Prawns In Claypot were nicely done, and the flesh of the meaty giant prawns was sweet. This can only be achieved when seafood is fresh and the preparation method allows its natural taste to shine, instead of marinating it and adding complicated flavours. Highly recommended dish to try if you're a great prawn lovers!

Padi Field Crab Rice

Another dish that stood out was the Padi Field Crab Rice. A rice dish originated from Hainan Island (similar to the Hainan chicken rice) and made famous by the Soong Sisters, in which the chef has improvised the dish to suit the local taste. Meaty freshwater Padi Field Crabs are used for the dish. They are known for the name as it's mainly found breeding in moist habitats like lakes and bunds of padi field.

Ingredients such as butter, lemongrass, pandan leaf, garlic and shallots are used to cooked the rice prior to steaming it in the lotus leaf to absorb the oil and enhances the flavour of the rice too.The crab rice is light and addictive with an aromatic taste and goes well with the chunky pieces of the crab meat that goes on top of the dish.

Braised Kampung Chicken With Pig Tendon
The chicken meat texture is firm, really tender and well-marinated with the generous amount of sweet peas and pig tendon that made this another comfort food candidate indeed. My hubby loves the soft, tender braised pig tendon with just enough cartilage and wobbly bits to make you go oooo..... and served up in thick, dark starchy oyster sauce that's rich with chicken flavour. Good to eat with a warm bowl of rice.
