The region's most celebrated and anticipated gourmet food event, the Malaysia International Gourmet Festival ~ MIGF ~ is backed. Themed "Galactic Chefs! 2015: A Food Odyssey", the 15th edition of the festival will be held from 1st to 31st October, beckoning food lovers to visit the participating restaurants. This year, I was honoured to be invited to review Imperial Rama, among the world-class participating restaurant of Resorts World Genting; with Chef Andy Seng Lup Meng whipping up memorable culinary masterpieces. These specially created Festival menu are available for the whole month of October where diners will get to enjoy the innovative and creative Festival menu at special Festival prices.

Chef Andy of Imperial Rama, a fine dining Thai and Chinese restaurant nestled above the clouds at the hills of Genting Highlands at Resorts World Genting, has fashioned five courses of exquisite modern Chinese cuisines for their Malaysia International Gourmet Food Festival 2015 (MIGF) menu.

 
Elegant décor lend a blend of exclusiveness, sleek and stylish interior, further enhanced by the scores of well-known entertainers that have wined and dined here. 

Regal, contemporary and luxurious-looking, Imperial Rama comes with intricately craved Thai and Chinese partitions, grand wall paintings and auspicious statues adding to the oriental refinement of the restaurant.


The Festival menu features creatively presented by Executive Sous Chef Andy incorporating high quality and premium ingredients sourced from Peru, South America and Dalian, China. "The menu was crafted based on what I felt people would enjoy and to bring a new spin to Imperial Rama's menu," he said.

As meals were served to us , it was evident that much thought and effort went into the not just the blending of ingredients, but also in taste and food presentation. We were served a full five-course modern Chinese dishes starting with the appetiser as follows ....

Appetiser
Crystal Prawn

Our course began with a seafood appetiser of Pan Seared Tiger Prawn topped with salmon roe and Tuna wrapped with Avocado, served alongside with premium imported Australian asparagus and Japanese red pickles. The freshness of the large prawn was evident as I bite into thick and succulent meaty prawn. Salmon roe, on the other hand adds a slightly saltish taste to the delicious combination of this seafood appetiser.  
  
I also enjoyed eating the Tuna Avocado Wrap. The tuna and buttery-taste of avocado complement each other and paired up wonderfully.

Soup
Double Boiled 6 Head Abalone with Dried Maca & Chicken Soup

Imperial Rama's double-boiled abalone with dried maca chicken soup was the signature dish of the day. Simply a trove of treasure filled to the brim with fresh ingredients such as chicken thigh, scallops, dry shiitake mushroom, pork bits together with herbs of wolfberries (kei chee), tong shum and special dried maca.

The nourishing broth was well-infused with flavours is my type of comfort food, ridiculously delicious with every spoonful. Loving this tummy-warming soup that clears the palate and freshens up the mind with a dose of Peruvian ginseng!

Dried Maca

Chef Andy incorporated the dried maca into the soup for its nourishing and rejuvenating properties. A potent and ancient Peruvian superfood. dubbed as the Peruvian ginseng;  the slices of dried maca - retails at RM 700 per kilo. It look like dried slices of ginseng, which give the soup a tea-like colour and a pleasant sweet flavour. 

Entree
Baked Golden Pomfret with Chef Sauce

Pleasantly presented in an oversized plate, the Golden Pomfret was drizzled with house made Chef BBQ sauce served on bed of escarole lettuce salad infused with calamari juice for that extra kick.

The Golden Pomfret fillet was fresh, sweet tasting firm texture and and really goes well with the flavourful smoky and sweet BBQ sauce.

 Main Course 1
 Stuff Sea Cucumber with Noodle Cheese Sauce

For our main course, we relished poached sea cucumber stuffed with pork, prawn and chestnut paste, special Taiwanese noodles (Konnyaku handmade sliced noodles) with cheese sauce as well as poached Chinese spinach (Po choi).
    
The Dalian Sea Cucumber hits all the right notes with the moist, soft and succulent textures while the pork-prawn stuffing was meaty and an enjoyable treat. 

On the other hand, the pretty-looking Taiwan noodles was smooth, well-cooked with firm texture. Tasted like thick pan mee and goes perfectly well with the cheese sauce.

 Dessert
Bird's Nest with Mango Puree & Snow Mango Mochi 

For the finale to the delectable creation of Imperial Rama Festival Menu. Chef Andy tickle our sweet-tooth with a very light and sweet Bird's Nest with Mango Puree. delightful glass of sweet ripe mango ice-blended juice, topping it up with one of the world's most expensive foods, edible birds' nest.  

Pairing together is with Snow Mango Mochi; a light blue mochi wrapped around fresh cream topped with a crunchy oblong biscotti. Almost a perfect for a light ending to our sumptuous five course meal. A simple dessert for me would be a refreshing and delightful mochi ice cream instead.
